For centuries, chicken eggs have been part of the human diet. This product is very rich in amino acids necessary for the human body, contains many vitamins such as A, D, B, E, biotin, choline, calcium, iron, magnesium, phosphorus, zinc, and other useful substances. They are almost completely assimilated by the human body. Eggs have a limited shelf life. It depends on certain conditions in which the egg is stored.
How eggs differ
Store eggs and homemade eggs differ primarily in their taste. This is because a village chicken has a diet very different from that of a chicken on a poultry farm. There they are kept in cages and receive special food, focused on the production of eggs or to build up the mass.
Eggs differ in color. In chicken eggs, the pigment in the shell, in the outer layer, determines the color. It can take on shades ranging from snow white to dark brown. The color of the egg depends on the breed of the chicken - it is a hereditary trait, such as the color of the plumage.
Why chickens lay eggs of different colors
To a greater extent, the color of the eggshell will depend on the breed. Therefore, it is possible to predict which eggs the chicken will lay in advance. Of course, this will not be 100% correct, but in most cases the calculations turn out to be correct. Mistakes are rare, but sometimes even within the same breed, laying hens can lay eggs of different colors.
To determine which eggs a chicken will lay, you need to look at its earlobe. If it is white, the hen will lay light colored eggs; if it is red, the eggs will be brown. The brown color of the eggs is given by the pigment protoporphyrin, which, when the shell is formed, is produced by the cells of the lining of the uterus. And in South America, amazing chickens were found - without a tail, but with horns, that is, feathered growths in the place where horns grow in animals. These chickens lay bluish green eggs.
In honor of the Indian tribe who bred this breed, the breed was named "Araucana". In America, in the middle of the last century, araucana chicken eggs were ten times more expensive than ordinary ones. It was believed that they had a lowered amount of cholesterol, and there were much more useful microelements than ordinary ones. The fact that, in addition to the color of the shell, they are no different from simple eggs, it turned out much later. Araucans have now been hatched, laying both blue and green, as well as pink and yellow eggs.
In part, the color of the eggshell can be influenced by the diet of the birds - if some of the amino acids are deficient, the intensity of the color of the eggs weakens noticeably. At the same time, the quality does not suffer in any way.
